Dosa is a common breakfast you find at every South Indian home. But I did find some of my friends from other parts of India eat dosa only at restaurants thinking, it is a tedious process to be done at home. The recipe is quite simple, and it soon becomes a staple food at your home as dosas are light on stomach and frankly it can replace any meal of your day. So do try it out ?
Ingredients:
Urad Dal- 1 cup
Raw Rice – 2 cups
Rice flakes/Poha (medium/ thick) – Half cup
Fenugreek Seeds / Methi – 1 tablespoon
Salt – as per taste
Sugar – 1 tablespoon

Procedure:
Take urad dal, rice and fenugreek seeds in a large bowl and wash it out thoroughly. Now add rice flakes to it and soak it with enough water. Note the water should be more as rice and dal bulges in size as soaked. It generally needs to be soaked for good 7 to 8 hours. I soak it at night before I go to bed.
After soaking, grind it in a mixer or a wet grinder with water enough to make a smooth or lightly grainy batter. Now this batter needs fermentation. Fermentation needs another 6 to 7 hours depending on the weather. Fermentation takes less time in warmer places than cold regions. So, your batter might take 6 to 7 hours for fermentation if the day is hot and it might take around 12 hours if the weather is cold. (In colder places you can place the batter in an oven or microwave with lights on, which can help with fermentation)
Then after the batter ferments and increases in volume, add salt and sugar. Adding sugar, will not only enhance the taste but will also give brown colour to the dosa. The batter need not be very thick or runny so add little water accordingly.
Spread the batter on a non-stick pan and always keep the flame medium. High flame will not allow you to spread the batter easily. And before putting the batter on the non-stick, add few drops of oil and water on the pan and wipe it off with a tissue.
I generally like to cook dosa on both sides, but you can just cook on one side by covering it after spreading it on non-stick. You can spread it into thin layer or make a thick dosa with veggies on it. Don’t forget to drizzle some oil after spreading on pan. You can serve it with chutney or veg curry or simple potato curry.
